A fresh watermelon fruit cake topped with brigadeiros makes for a great summer party cake. I made it for a pool party, and it was a hit with the kids and grown-ups too! Here’s the super easy recipe:
1 small watermelon
2-3 peaches, thinly sliced
1 cup of fresh blueberries
12 gluten-free brigadeiros or more
Slice the watermelon into 3/4″ to 1″ thick slices. Place 1 slice of watermelon on a serving plate. Add a layer of sliced peaches. Repeat to form a 3 layer of watermelon cake. Add blueberries or berries of your choice to the top layer. Top it off with gluten-free Brigadeiros (add the brigadeiros right before serving).
